Katsuobushi of gerookte en gedroogde bonitovlokken vormen samen met kombu of kelp de basis van onder meer dashi. Een basisingrediënt dat aan de Japanse keuken evenveel eigenheid geeft als vlees- of gevogeltebouillon aan onze westerse eetcultuur.
